Make-ahead chia puddings with stone fruit

Breakfast can sometimes seem like a chore, but it’s the meal that will give you that kick-start you need for the day ahead. To make it easier, there are a few brekkie options that can be made the night before, so all you need to do is grab and go in the morning.

These stunning make-ahead chia puddings are the ultimate breakfast. They’re also a great brekkie to enjoy as we move into the warmer months.

Simply blend the chia seeds with coconut milk and maple syrup and soak overnight, or, if you can’t wait that long, set it aside for 15 minutes until the mixture has thickened. Dress the puddings with gorgeous summer nectarines and apricots, top with maple syrup and finish off with some coconut flakes. Simply delicious.

Chia puddings can also be served with plenty of other fruits and toppings of your choice, if you prefer.
