As we creep closer and closer to Christmas Day, it’s one thing to be thinking about your Christmas menu but we’re already thinking about how to use-up all those tasty leftovers.

Christmas ham, turkey, roast veggies and other dishes can easily be turned into a whole other meal or snack on Boxing Day. Even the leftovers from your cheese board can be given a new life. These seriously easy hash brown ham and egg nests are the perfect idea to use-up leftover Christmas ham.

These tasty hash brown nests would make for a fuss-free Boxing Day breakfast or snack to enjoy throughout the day. All you need to do is grate your potatoes, dice up the ham and toss in some cheese. Add an egg to each nest and sprinkle with extra ham and cook. So easy and seriously delicious.
