1. Use good quality baking ingredients
Hot cross buns use simple baking ingredients. Flour, butter, milk, sugar. So make sure to choose quality ingredients. You will definitely see a particular difference when choosing good quality butter and bakers flour.
2. Add a mix of fruit and spice
That incredible spicy, fruity flavour in hot cross buns is created when you use a mix of fruit and the correct spice mix. So don’t just use sultanas, add chopped dried apricots, rind and mixed spice for flavour that has depth.
3. Don’t aim for a perfect appearance
Unlike some baking projects, hot cross buns look even better when they are rustic in appearance. So don’t fuss over getting your buns to look identical, and instead make them with love, brushing over the glaze and applying the crosses, in any way you choose!
4. Use good old fashioned elbow-grease

5. Don’t be afraid to mix it up
While so many put forth an argument to say traditional is the only way to have buns, we think that a sneaky choc chip doesn’t hurt. Try halving your dough and adding a surprise ingredient to one half, and keeping the other half traditional! This way you can have the best of both worlds.
