How to get perfect crispy parmesan stacks?
The key to great potato stacks is to use potato slices of even thickness. The easiest way to achieve this is by using a mandolin or a food processor. When the slices are all the same thickness they cook evenly which is very important.
The other key factor in getting this dish right is to cover stacks well in the seasoning using olive oil. This ensures that the stacks become golden and crispy and do not dry out in the cooking process.
